Sheep-shaped Ravioli

Sheep-shaped ravioli, Spring 2005. Filled with potato. This mold was influenced by the desire to work with silicon. It shared the same form as the chocolate mold.

Here’s the process:
First create the positive form. This particular form was the head of the sheep imagined like the style of a deer’s head on a plack but only bite sized.

Then use a ravioli sheet and press the ingredients inside. Originally I tried using a ricatta cheese recipe but the form didn’t hold after cooking. The mold is done but the recipe needed to be more refined before anymore sheep-shaped ravioli is served…
